ROASTED SHRIMP CAPRESE FEATURING GALBANI® FRESH MOZZARELLA

Ingredients

12 oz. Galbani Fresh Mozzarella, marinated
2 tbsp. Olive Oil, divided
8 oz. Galbani Fresh Mozzarella, cut into ½-inch slices
16 Shrimp, peeled and deveined
2 tbsp. Garlic and Herb marinade
1 pinch Crushed Chili Flakes
16 Oven-dried Cherry Tomatoes
1 tbsp. Fresh Basil julienne
1 tbsp. Basil infusion oil
1 Lemon cocktail fork

Directions

  1. In a medium pan, heat half of the olive oil (one tablespoon) over medium-high heat, toast the quinoa for 3-4 minutes until lightly brown and fragrant.
     
  2. Toss shrimp with garlic and herb marinade and chili flakes. Place in baking dish.
     
  3. Place shrimp in oven till ¾ cooked. Remove from oven and top each shrimp with mozzarella and oven-dried cherry tomatoes. Return to oven to cook.
     
  4. After approx. 2 more minutes—when shrimp are fully cooked and cheese is soft but not completely melted and running off shrimp—garnish with basil and basil infusion oil.
     
  5. Add lemon fork.
