ROASTED SHRIMP CAPRESE FEATURING GALBANI® FRESH MOZZARELLA
||Galbani Fresh Mozzarella, marinated
||Olive Oil, divided
||Galbani Fresh Mozzarella, cut into ½-inch slices
||Shrimp, peeled and deveined
||Garlic and Herb marinade
||Crushed Chili Flakes
||Oven-dried Cherry Tomatoes
||Fresh Basil julienne
||Basil infusion oil
||Lemon cocktail fork
- In a medium pan, heat half of the olive oil (one tablespoon) over medium-high heat, toast the quinoa for 3-4 minutes until lightly brown and fragrant.
- Toss shrimp with garlic and herb marinade and chili flakes. Place in baking dish.
- Place shrimp in oven till ¾ cooked. Remove from oven and top each shrimp with mozzarella and oven-dried cherry tomatoes. Return to oven to cook.
- After approx. 2 more minutes—when shrimp are fully cooked and cheese is soft but not completely melted and running off shrimp—garnish with basil and basil infusion oil.
- Add lemon fork.
