Taste of Europe Salad

INGREDIENTS
FOR THE VINAIGRETTE
Amount | Ingredient |
---|---|
½ cup | Cold-pressed, fruity extra virgin olive oil |
1 tsp. | Sicilian dried oregano |
1 tsp. | Dry mustard |
5 | Large garlic cloves, smashed |
2 tbsp. | Freshly squeezed lemon juice |
½ tsp. | Kosher salt |
¼ tsp. | Freshly ground black pepper |
FOR THE SALAD
Amount | Ingredient |
---|---|
1 | Head Belgian endive, leaves separated |
½ cup | French green beans, blanched |
½ cup | Cherry tomatoes |
½ cup | Cucumbers, sliced |
¼ cup | Red onion, sliced |
½ cup | Président® Feta, crumbled |
METHOD

For the vinaigrette, combine the ingredients in a bowl and whisk vigorously to combine. Set aside and allow to sit for at least one hour before serving.

For the salad, add all the vegetables to a serving bowl.

Remove garlic cloves from the vinaigrette and whisk again to combine.

Pour half of the dressing onto the salad. Add the crumbled Feta, and gently toss to coat and combine the ingredients. Serve immediately, with the remaining vinaigrette on the side.
