Galbani® Heirloom Caprese Ciabatta

INGREDIENTS

2–3 Red onions
1 Ciabatta loaf (4–5 inches)
2–3 tbsp. Mayonnaise
4–5 Fresh basil leaves, thinly sliced
5–6 slices Galbani Thin Sliced Fresh Mozzarella
½  Heirloom beefsteak tomato, sliced
1 tbsp. Extra virgin olive oil
  Kosher salt and freshly ground pepper to taste

METHOD

  1. Thinly slice the red onions, soak in cold water, then dry well with paper. Set aside.
     
  2. Slice ciabatta bread lengthwise and toast lightly.
     
  3. In a small bowl, combine basil and mayonnaise. Spread the mixture on the bottom half of the loaf.
     
  4. Alternate slices of Galbani Thin Sliced Fresh Mozzarella and tomato on top of bread, and garnish generously with red onion.
     
  5. Drizzle lightly with extra virgin olive oil, and add a dash of kosher salt and freshly ground pepper to taste. Top with the top half of ciabatta and serve.
