Galbani® Rosemary-Crusted Chicken Sandwich

INGREDIENTS
For the Tomato Garlic Chutney
| 1 | Large tomato, coarsely chopped |
| 6 cloves | Garlic, minced |
| 4 | Scallions, green and white part, sliced thin |
| ¼ cup | Cilantro, finely chopped |
| 2 tbsp. | Extra virgin olive oil |
| ¼ | Fresh jalapeño, minced |
For the Sandwich
| ½ cup | Galbani Grated Parmesan |
| 1 tbsp. | Fresh rosemary |
| ¾ cup | Italian breadcrumbs |
| 2 | Chicken breast cutlets, pounded slightly |
| 2 | Eggs, lightly beaten |
| 2 tbsp. | Unsalted butter |
| 4 slices | Asiago or sourdough bread |
| ½ cup | Caramelized red onion |
| 8 slices | Galbani Thin Sliced Fresh Mozzarella |
| Extra virgin olive oil | |
| Baby spinach, to top | |
| Kosher salt, to taste | |
| Freshly ground pepper, to taste | |
METHOD
For the Tomato Garlic Chutney

Combine all ingredients in a small bowl and set aside.
For the Chicken

Combine Parmesan, rosemary, and breadcrumbs in a shallow dish.

Dip each piece of chicken into egg first, letting excess drip off. Coat evenly in Parmesan mixture.

Heat an even layer of olive oil in a pan over medium heat (about ¼-inch thick).

Shallow-fry chicken about 5 minutes per side or until cooked through.
To Assemble Sandwiches

Spread butter on bottom and tops of bread.

Place chicken on the bottom piece of bread.

Layer caramelized onions, Mozzarella, spinach, and Tomato Garlic Chutney.

Place in panini press. Cook until cheese is melty.
