Galbani® Winter Caprese

Serves 3

INGREDIENTS

2 cups Cherry tomatoes
  Sprigs of thyme
2 cloves Garlic, smashed
⅓ cup Extra virgin olive oil
  Kosher salt
3 balls Galbani Fresh Mozzarella (Ovoline) at room temperature
  Flaky sea salt
  Country-style bread, brushed with olive oil, toasted in oven
   

METHOD

  1. Preheat oven to 350 degrees F. Toss tomatoes, thyme, garlic, and oil on a rimmed baking sheet to coat, and season lightly with kosher salt.

  2. Spread tomato mixture out in a single layer and roast until tomatoes are bursting and lightly browned, about 30–40 minutes. Let cool.

  3. Arrange Ovoline on a platter. With hands, tear into large pieces. Spoon warm tomato mixture with juices over the platter and Ovoline. Sprinkle with sea salt.

  4. Serve with olive-oil-toasted bread for soaking up all the juices. Garnish with basil.
