PRÉSIDENT® DON BERNARDO® MANCHEGO AND PROCIUTTO FRIED CHEESE STICKS WITH ROMESCO SAUCE
Serves 4
INGREDIENTS
Fried Cheese
1 lb. | Président Don Bernardo Manchego cheese, cut into sticks 3” x ¾” |
2 oz. | Prosciutto, sliced thinly |
1 cup | All-purpose flour |
3 | Eggs, beaten |
1 cup | Seasoned breadcrumbs |
Vegetable oil as needed |
Sauce
12 oz. | Roasted red peppers |
½ cup | Almonds, blanched, toasted |
4 | Garlic cloves |
8 oz. | Crushed tomatoes |
3 tbsp. | Sherry vinegar |
1 tsp. | Kosher salt |
8 oz. | Water |
METHOD
- Wrap each Président Don Bernardo Manchego cheese stick with the prosciutto.
- Coat cheese sticks with flour, egg, and then seasoned breadcrumbs. (Can be done twice for a thicker crust.)
- Heat vegetable oil to 350 degrees F. Fry each cheese stick until golden brown, about 1–2 minutes.
- Remove fried cheese sticks from oil and let drain on paper towels.
- Sauce: Add all ingredients except water to a blender. Puree until smooth, adjusting the consistency with water as needed. Heat the sauce prior to serving and use as needed.
EXPERT TIP
As a variation, fry cheese in triangles instead of sticks. This gives a nod to the traditional shape of the Président Don Bernardo Manchego cheese slice.
