PRÉSIDENT® DON BERNARDO® MANCHEGO AND PROCIUTTO FRIED CHEESE STICKS WITH ROMESCO SAUCE

Serves 4

INGREDIENTS

Fried Cheese

1 lb. Président Don Bernardo Manchego cheese, cut into sticks 3” x ¾”
2 oz. Prosciutto, sliced thinly
1 cup All-purpose flour
3 Eggs, beaten
1 cup Seasoned breadcrumbs
  Vegetable oil as needed

Sauce

12 oz. Roasted red peppers
½ cup Almonds, blanched, toasted
4 Garlic cloves
8 oz. Crushed tomatoes
3 tbsp. Sherry vinegar
1 tsp. Kosher salt
8 oz. Water

METHOD

  1. Wrap each Président Don Bernardo Manchego cheese stick with the prosciutto.
  2. Coat cheese sticks with flour, egg, and then seasoned breadcrumbs. (Can be done twice for a thicker crust.)
  3. Heat vegetable oil to 350 degrees F. Fry each cheese stick until golden brown, about 1–2 minutes.
  4. Remove fried cheese sticks from oil and let drain on paper towels.
  5. Sauce: Add all ingredients except water to a blender. Puree until smooth, adjusting the consistency with water as needed. Heat the sauce prior to serving and use as needed.

EXPERT TIP

As a variation, fry cheese in triangles instead of sticks. This gives a nod to the traditional shape of the Président Don Bernardo Manchego cheese slice.
