Galbani® Radiant Rainbow Salad


For the Lemon Herb Dressing

¾ cup Extra virgin olive oil
¼ cup Fresh lemon juice
1 tbsp. Fresh chives, finely chopped
1 tbsp. Dijon mustard
1 Small shallot, minced

For the Salad

4 cups Kale, torn into bite-sized pieces
½ cup Red cabbage, finely shredded
½ cup Red cherry tomatoes, halved
1 Yellow pepper, thinly sliced
1 Red pepper, thinly sliced
1 cup Carrots, sliced and blanched in salted water until al dente
10 slices Galbani Thin Sliced Fresh Mozzarella
  Kosher salt, to taste
  Freshly ground black pepper, to taste


  1. Place Lemon Herb Dressing ingredients in a container and emulsify with an immersion blender.
  2. Combine salad ingredients in a large bowl and toss with enough dressing to coat lightly.
  3. Place generous portions of salad in bowls and top with 5 slices of Mozzarella each.
  4. Season with salt and pepper.
