Galbani® Fried Green Tomato Caprese


For the Cajun Comeback Sauce

1 cup Mayonnaise
3 tbsp. Ketchup
2 tbsp. Honey
1 tbsp. Hot sauce
2 tsp. Cajun seasoning
1½ tsp. Worcestershire sauce
1 tbsp. Fresh chives

For the Fried Green Tomatoes

2 Green tomatoes, thickly sliced
1 Egg, whisked
1½ cups Panko breadcrumbs
6 slices Galbani Thin Sliced Fresh Mozzarella
  Extra virgin olive oil
  Kosher salt, to taste
  Freshly ground black pepper, to taste
  Fresh basil leaves


  1. Whisk together ingredients for Cajun Comeback Sauce and set aside.

  2. Bread the tomato slices by dipping in egg, then breadcrumbs. Continue until all slices are coated. Set aside.

  3. Pour enough olive oil in a fry pan to shallow-fry breaded tomato slices. Fry on medium heat, about 3 minutes per side or until golden brown and slightly softened.

  4. Season fried tomatoes with salt and pepper.

  5. To layer, start with a fried green tomato slice and top with 1 slice Mozzarella, followed by a few basil leaves. Repeat layering, ending with a fried green tomato slice.

  6. Drizzle with Cajun Comeback Sauce and serve.
