PISTOU WITH PRÉSIDENT® DON BERNARDO® MANCHEGO CHEESE
Extra virgin olive oil
Onion, medium, yellow, diced small
Garlic cloves, minced
Rosemary, fresh, minced
Oregano, fresh, minced
Thyme, fresh, minced
Squash, medium, yellow, diced small
Zucchini, medium, diced small
Pepper, large, red, diced small
Eggplant, small, diced small
Président Don Bernardo® Manchego cheese, shredded
Sourdough bread, sliced & toasted
Heat 3 tbsp. of extra virgin olive oil in large sauté pan. Add onion and cook until translucent. Add garlic and rosemary, oregano, and thyme, and cook for 1 minute longer. Transfer mixture to a large colander to allow any excess oil to drain, and reserve.
Heat remaining extra virgin olive oil 3 tablespoons at a time, and cook squash, zucchini, pepper, and eggplant one at a time until softened (about 3–5 minutes each.) Transfer each vegetable to the colander and reserve. Continue cooking squash, zucchini, pepper, and eggplant in this manner until all are cooked through.
Return all vegetables to the sauté pan and add tomatoes and cumin. Cook for 2 minutes more. Then transfer pistou to serving bowl.
Top each piece of toasted bread with shredded Président Don Bernardo Manchego cheese. Broil on High for about 1 minute or until cheese is melted and bubbling. Serve with pistou.
