APPLE & ARUGULA SALAD WITH PRÉSIDENT® DON BERNARDO® MANCHEGO CHEESE

Serves 4

INGREDIENTS

4 cups Baby arugula
1 Red apple, medium-sized, julienned
4 oz. Président Don Bernardo Manchego cheese, shaved
4 oz. Candied walnuts
4 tbsp. Sherry vinegar
1 tsp. Dijon mustard
1 tbsp. Shallots, minced
1 cup Extra virgin olive oil
  Kosher salt & freshly ground black pepper to taste

METHOD

  1. To prepare the salad, mix baby arugula, julienned apple, shaved Président Don Bernardo Manchego cheese, and candied walnuts together in large serving bowl.
  2. To make the salad dressing, mix sherry vinegar, Dijon mustard, and minced shallots together in a small bowl. Slowly whisk in extra virgin olive oil. Season to taste with kosher salt & freshly ground black pepper.
  3. Toss the arugula salad with drizzled salad dressing and mix thoroughly.
