Galbani® Premio Veggie Panini

Serves 2-4

INGREDIENTS

1 Small zucchini, sliced thin lengthwise
1 Small red bell pepper, sliced thin
1 Small red onion, sliced thin
1 Small baby Portobello mushrooms, sliced thin
⅓ cup Extra virgin olive oil
4 slices Sourdough bread
¼ cup Pesto mayo
4 slices Galbani Premio Mozzarella Loaf, sliced thin
  Kosher salt, for seasoning
  Freshly ground black pepper, for seasoning
  Softened butter, for spreading on bread
   

METHOD

  1. Toss sliced vegetables in olive oil and season with salt and pepper. 

  2. Grill vegetables in a grill pan or on a grill until they are charred and cooked through. 

  3. Spread 1 teaspoon of softened butter on both sides of bread. 

  4. To assemble sandwiches, start with a layer of pesto mayo, top with grilled vegetables, and place a slice of Mozzarella on top.

  5. Cook sandwiches in panini press until golden brown. Cut in half and serve.
