APPLE & ARUGULA SALAD WITH PRÉSIDENT® DON BERNARDO® MANCHEGO CHEESE
Serves 4

INGREDIENTS
| 4 cups | Baby arugula |
| 1 | Red apple, medium-sized, julienned |
| 4 oz. | Président Don Bernardo Manchego cheese, shaved |
| 4 oz. | Candied walnuts |
| 4 tbsp. | Sherry vinegar |
| 1 tsp. | Dijon mustard |
| 1 tbsp. | Shallots, minced |
| 1 cup | Extra virgin olive oil |
| Kosher salt & freshly ground black pepper to taste |
METHOD
- To prepare the salad, mix baby arugula, julienned apple, shaved Président Don Bernardo Manchego cheese, and candied walnuts together in large serving bowl.
- To make the salad dressing, mix sherry vinegar, Dijon mustard, and minced shallots together in a small bowl. Slowly whisk in extra virgin olive oil. Season to taste with kosher salt & freshly ground black pepper.
- Toss the arugula salad with drizzled salad dressing and mix thoroughly.
