President® Crumbled Goat Cheese and Spinach Frittata
Serves 4

INGREDIENTS
| 1 tbsp. | Extra virgin olive oil |
| 6 oz. | Baby spinach |
| ½ cup | Scallions, sliced |
| 1 pinch | Salt |
| 1 pinch | Pepper |
| 10 | Eggs, beaten |
| 4 oz. | President® Crumbled Goat Cheese |
METHOD
- Heat oven to 350 degrees F. In a non-stick, oven-safe skillet (like cast iron), heat the extra virgin olive oil over medium heat. Add the spinach and half of the scallions. Toss frequently until spinach is just barely wilted. Season with salt and pepper.
- Add the eggs to the skillet, stirring a couple of times to combine well. Sprinkle the top of the frittata with remaining scallions and Goat Cheese. Cook on the stovetop just until the edges start to set.
- Transfer the skillet to the oven and bake for 7–10 minutes, or until the center of the frittata is firm and completely set.
