Galbani® Bocconcini & Berry Baguette

Serves 8

INGREDIENTS

1 Baguette, sliced thin (approx. 16 slices)
½ cup Pesto
1 cup Small strawberries, cut in half
1 tub Galbani Fresh Mozzarella Bocconcini (16 pieces), cut in half 
¼ cup Fresh basil, cut into chiffonade
  Extra virgin olive oil, for brushing & drizzling
  Kosher salt, for seasoning
  Freshly ground black pepper, for seasoning
  Balsamic reduction glaze
   

METHOD

  1. Preheat oven to 350 degrees F.

  2. Place baguette slices on a sheet pan. Lightly brush with olive oil. Bake for 12–15 minutes or until light golden brown.

  3. Spread a small amount of pesto on each slice. Arrange strawberries, Bocconcini, and basil on top of each.

  4. Season with a pinch of salt and a few grinds of pepper. Drizzle with balsamic reduction and serve.
