Taste of Europe Salad

INGREDIENTS

FOR THE VINAIGRETTE

½ cup Cold-pressed, fruity extra virgin olive oil
1 tsp. Sicilian dried oregano
1 tsp. Dry mustard
5 Large garlic cloves, smashed
2 tbsp. Freshly squeezed lemon juice
½ tsp. Kosher salt
¼ tsp. Freshly ground black pepper
   

FOR THE SALAD

1 Head Belgian endive, leaves separated
½ cup French green beans, blanched
½ cup Cherry tomatoes
½ cup Cucumbers, sliced
¼ cup Red onion, sliced
½ cup Président® Feta, crumbled
   

METHOD

  1. For the vinaigrette, combine the ingredients in a bowl and whisk vigorously to combine. Set aside and allow to sit for at least one hour before serving.

  2. For the salad, add all the vegetables to a serving bowl.  

  3. Remove garlic cloves from the vinaigrette and whisk again to combine.

  4. Pour half of the dressing onto the salad. Add the crumbled Feta, and gently toss to coat and combine the ingredients. Serve immediately, with the remaining vinaigrette on the side.
