Feta Topped Fried Egg Salad

Looking for a fresh idea for brunch, or a unique signature salad? Try this modern twist on a traditional wedge featuring the incomparable flavor of Présiden Feta.

Ingredients

1 Head of lettuce
8 strips Bacon
1 medium Onion
4 Eggs
1 cup Président feta crumbles
  Olive oil
  Kosher salt
  Black pepper
  Dried cranberries

Directions

  1. Light grill or heat grill pan over medium high heat.
  2. Slice lettuce into four wedges and brush lightly with olive oil.
  3. Grill lettuce wedges on both sides until they start to brown. Sprinkle with salt.
  4. Grill bacon and onions on both sides.
  5. Fry eggs in a little olive oil until the whites are cooked but the yolks are still runny. Season eggs with salt and pepper.
  6. Place each lettuce wedge on a plate, and top with two slices of bacon, some onion, an egg, and ¼ cup of Président Feta crumbles.
  7. Garnish with cranberries.
