Galbani® Star-of-the-Show Pizza

INGREDIENTS

For the Cheese Filling

1 cup Galbani Ricotta
½ cup Galbani Premio Mozzarella, shredded
¼ cup Galbani Parmesan, grated
  Kosher salt, to taste
  Freshly ground black pepper, to taste
   

For the White Pizza Base

4 slices 12–14’’ Neapolitan Pizza Dough
⅓ cup Galbani Mascarpone
1 tbsp. Truffle oil
1–1½ oz. Galbani Gorgonzola, crumbled
½ cup Galbani Premio Mozzarella, shredded
   

For the Toppings

2 Prosciutto di Parma
4–5 Figs, sliced
1–1½ oz. Gorgonzola, crumbled
  Fresh basil leaves, hand-torn
  Fresh arugula, handful
  Extra virgin olive oil, for drizzling
  Freshly ground black pepper, to taste
   

METHOD

For the Cheese Filling

  1. In a bowl, combine Ricotta, ½ cup Mozzarella, Parmesan, salt, and pepper. Mix and set aside in fridge.

  2. To shape the star pizza, roll out the dough to 12–14 inches in diameter. Cut 8–10 evenly spaced small slits (about 2 inches long) around edge of the pizza.

  3. Place a spoonful of cheese filling at base of each slit.

  4. Fold the edges over the filling and pinch to create star-shaped points.


For the White Pizza Base

  1. In a small bowl, mix Mascarpone with truffle oil until smooth.

  2. Spread mixture over center of pizza, leaving star-shaped edges free of sauce.

  3. Sprinkle 1–1½ oz. Gorgonzola and ½ cup Mozzarella on top of Mascarpone base.

  4. Transfer pizza to the oven and bake until crust is golden, and cheese is bubbling and slightly browned.


For the Toppings

  1. After removing pizza from the oven, lay slices of prosciutto over the cheese and arrange fig slices on top.

  2. Next, sprinkle 1–1½ oz. Gorgonzola, and add a handful of arugula and basil.

  3. Drizzle lightly with olive oil and finish with pepper, to taste. Slice and serve.
