Galbani® Savory Butternut Squash Lasagna

INGREDIENTS

6 cups. Butternut squash, sliced
2 tbsp. Extra virgin olive oil
1 tbsp. Agave
¼ cup Butter (plus more for greasing)
2 pkgs. Galbani Whole Milk Ricotta (15 oz. pkgs.)
3½ cups Galbani Grated Parmesan (plus ½ cup for topping)
3½ cups Galbani Premio Mozzarella, shredded (plus ½ cup for topping)
3 Large eggs
½ tsp. Kosher salt
¾ cup Fresh Italian parsley, chopped
1 tsp. Pumpkin spice
1 pkg. No-boil lasagna noodles (9 oz. pkg.)
  Fresh herbs, for garnish
   

 

METHOD

  1. Preheat oven to 400 degrees F with rack in middle position.

  2. On a large-rimmed baking sheet, toss together squash and olive oil, then drizzle agave. Spread into an even layer. Bake 25 minutes until al dente.

  3. In a small saucepan, melt butter over medium heat until butter browns and has a nutty aroma (4–5 minutes). Remove from heat.

  4. In a food processor, mix Ricotta, Parmesan, Mozzarella, eggs, and salt until well combined (about 45 seconds). Transfer to a medium bowl and stir in parsley and pumpkin spice. Set mixture aside, and clean food processor.

  5. In clean food processor, add cooked squash and blend until smooth (about 1 minute).

  6. Lightly grease a 9” x 13” baking dish with butter. Spread thin layer of squash on bottom. Arrange 3 noodles on top. Spread 1 ¾ cups of cheese mixture over noodles. Top with a layer of squash, noodles, and cheese mixture. Repeat layering process. Cover top of lasagna with ½ cup Mozzarella and ½ cup Parmesan.

  7. Place a baking sheet lined with foil on bottom of oven to catch any cheese drips. Bake lasagna at 400 degrees F for 30 minutes. Uncover and bake until lasagna is heated through and top is nicely browned (20–25 minutes). Let stand 10 minutes before serving. Garnish with additional herbs.
