Galbani® Pineapple & Pancetta Pinsa

INGREDIENTS

16 oz. Pinsa style dough (or any dough you prefer)
1½ cups Galbani Premio Mozzarella, shredded
½ cup Pancetta, cubed
2-3 slices Pineapple, thinly sliced
½ cup Pomegranate seeds for garnish
  Galbani Mascarpone, softened, for garnish
  Honey for garnish
  Micro arugula or basil for garnish
   

METHOD

  1. Pre-heat the oven to the hottest setting possible.
  2. Roll the pizza dough into a rectangle shape large enough to fit your sheet pan.  Dock dough with tines of a fork, and par bake halfway through. Remove from oven.
  3. Spread shredded Mozzarella cheese evenly over pizza, leaving about a 1-inch circumference.
  4. Scatter pancetta cubes evenly over the cheese. Lay pineapple slices in the middle.
  5. Cook until bread is fully cooked, cheese is bubbly, pineapple starts to caramelize, and ham is nicely charred, about 5 to 7 minutes.
  6. To serve, dollop the pizza with Mascarpone to taste, drizzle with honey, and spread with micro arugula or basil. Sprinkle with pomegranate seeds and serve immediately.
