Galbani® Holiday Hangover Pizza

INGREDIENTS

1 10” Neapolitan dough round
¾ cup Galbani Premio Mozzarella, shredded
2 slices Thick-cut, hickory-smoked bacon
¼ cup Cherry tomatoes (preferably on vine), oven-roasted
2 Poached eggs
3 Large dollops of Galbani Ricotta
  Fresh basil leaves, for garnish
  Kosher salt, to taste
  Freshly ground pepper, to taste
  Calabrian chili paste, optional for garnish
   

METHOD

  1. Preheat oven to 500 degrees F or higher.
     
  2. Stretch dough into a more oblong shape instead of traditional round.
     
  3. Spread Mozzarella evenly over oblong-shaped dough.
     
  4. Fry bacon in pan until crispy, then set aside.
     
  5. Oven roast cherry tomatoes (preferably on vine), then set aside.
     
  6. Bring water for eggs to a boil, add vinegar, reduce to a simmer. 
     
  7. Drop eggs in simmering water. Cover and poach for 4 minutes. Place on paper towel.
     
  8. Place pizza in oven.
     
  9. Bake until the cheese has melted, and the crust is cooked and golden brown. Then remove from oven.
     
  10. Top with tomatoes, bacon, poached eggs, and basil. Sprinkle with salt and pepper. Break eggs table-side.
     
  11. Dollop with Ricotta, then sprinkle with salt and pepper. Serve immediately.
