Président® Brie Baked Egg Cups

Serves 6

INGREDIENTS

1 lb. Ham, sliced thin
6 oz. Président Brie, diced into ¼” cubes
10 Eggs
½ cup Asparagus, cooked & diced
½ cup Red pepper, diced
  Nonstick cooking spray
  Kosher salt, to taste
  Freshly ground black pepper, to taste
   

METHOD

  1. Preheat oven to 350 degrees F.

  2. Spray a 12-cup muffin pan with nonstick cooking spray.

  3. Place individual ham slices over each muffin cup and gently press down in the middle until a cup shape forms.

  4. At the bottom of each ham cup, add 3–4 cubes of Brie.

  5. In a medium bowl, whisk eggs together. Stir in diced asparagus, red pepper, and salt and pepper, to taste.

  6. Add about 2 tablespoons of egg mixture into each ham cup.

  7. Bake in oven for about 18–20 minutes.

  8. Remove from oven and use a fork to gently remove each ham cup, and serve.
