METHOD
For the Bacon
-
On an aluminum-foil-lined sheet pan, place the bacon slices and sprinkle heavily with coarsely ground fresh black pepper.
-
Bake at 400 degrees F for 15 minutes, rotating the pan halfway through cooking. Check for even doneness and cook for 5 minutes more, if necessary. Set aside.
For the Onions
-
In a large sauté pan with high sides, set to medium-high heat and add the onions and olive oil. Cover and let steam for about 5 minutes.
-
Uncover, season with salt and pepper, and continue cooking, stirring frequently until all moisture is evaporated and onions are well browned. Set aside.
For the Salad
-
In a blender, add the blueberries, vinegar, honey, and lemon juice. Pulse once or twice to break up the blueberries.
-
Blend while slowly adding the oil in a steady stream, then season with salt and pepper.
-
In a bowl, toss blueberry mixture with arugula.
For the Burgers
-
Shape the burgers and season generously with salt and pepper.
-
Grill to desired doneness and top with Brie just before taking off the grill.
For the Sandwiches
-
Spread ¼ cup of the onions on the bottom of each roll, then add ¼ of the salad on top of the onions on each roll.
-
Next, add cooked burger with Brie slices, top with 2 slices of cooked bacon and top of roll for each sandwich.
CHEF'S TIP
As a delicious alternative, skip the burger and add a slice of fresh tomato to each sandwich for a satisfying Brie-L-T!
