Président® Bacon Brie Burger

Serves 4

INGREDIENTS

For the Bacon

½ lb. Bacon, sliced thick
4 tbsp. Coarsely ground fresh black pepper
   

For the Onions

3 Large Vidalia onions, sliced thin
3 tbsp. Extra virgin olive oil
  Kosher salt, to taste
  Freshly ground black pepper, to taste
   

For the Salad

1 cup Fresh blueberries
¼ cup Balsamic vinegar
2 tbsp. Honey
1 tbsp. Lemon juice
¾ cup Extra virgin olive oil
2 cups Arugula
  Kosher salt, to taste
  Freshly ground black pepper, to taste
   

For the Burger

2 lbs. Ground chuck
  Kosher salt, to taste
  Freshly ground black pepper, to taste
   

For the Sandwiches

4 Pretzel rolls, toasted
1 cup Caramelized onions
2 cups Arugula salad
8 slices Bacon, cooked
8 oz. Président Brie, sliced ¼” thick
   

METHOD

For the Bacon

  1. On an aluminum-foil-lined sheet pan, place the bacon slices and sprinkle heavily with coarsely ground fresh black pepper.

  2. Bake at 400 degrees F for 15 minutes, rotating the pan halfway through cooking. Check for even doneness and cook for 5 minutes more, if necessary. Set aside.


For the Onions

  1. In a large sauté pan with high sides, set to medium-high heat and add the onions and olive oil. Cover and let steam for about 5 minutes.

  2. Uncover, season with salt and pepper, and continue cooking, stirring frequently until all moisture is evaporated and onions are well browned. Set aside.


For the Salad

  1. In a blender, add the blueberries, vinegar, honey, and lemon juice. Pulse once or twice to break up the blueberries.

  2. Blend while slowly adding the oil in a steady stream, then season with salt and pepper.

  3. In a bowl, toss blueberry mixture with arugula.


For the Burgers

  1. Shape the burgers and season generously with salt and pepper.

  2. Grill to desired doneness and top with Brie just before taking off the grill.


For the Sandwiches

  1. Spread ¼ cup of the onions on the bottom of each roll, then add ¼ of the salad on top of the onions on each roll.

  2. Next, add cooked burger with Brie slices, top with 2 slices of cooked bacon and top of roll for each sandwich.

 

CHEF'S TIP

As a delicious alternative, skip the burger and add a slice of fresh tomato to each sandwich for a satisfying Brie-L-T!
